As the founder of Satou, my own personal journey took an unexpected turn. Just before the pandemic, I developed a series of allergies that limited my ability to enjoy the very desserts I loved making. This got me really curious, and I started learning more about the ingredients used in baking. What I found surprised me – there’s not much information out there about what goes into baked goods, and lots of bakers use a type of ingredient called compound, especially in India. Even during my own culinary education, the use of compounds was very common.
